This tea is another beautiful piece, which we managed to buy from our favourite place inside the Wuyi park. It comes from the Shui Lian Dong area – a place where most tourists go to feed pigeons 🙂 and not far from it to watch the falling water from the rocky waterfall, which is named after this area. Perhaps most important at this point in the inner park are large tea gardens, which are at the top of the rock mostly planted with Shui Xian variety. There are also several taller and older tea bushes of this plant, about 100 years old. This Shui Xian is made of about 30 years old bushes.
The tea leaves were roasted about 12 hours at the temperature of 100-110°C. And than, one month later, the process is repeated. The last one, the third baking – in September (harvest was in the end of May) is 8 hours at the temperature of 90 °C.
The taste and aroma is similar to some liquer or older cognac with the hints of virgin tobacco, rare spices, dried fruits, cocoa, plum jam and dried flowers.
